Mimi's Buttermilk Biscuits

2 c. AP flour
1 Tbsp. baking powder
1/2 t. salt
1/4 t. baking soda

1/3 c. shortening (mimi uses canola or vegetable oil...NOT butter, crisco, lard or anything else)
2/3-3/4 c. buttermilk

Sift all dry ingredients together.
Add wet ingredients.
(Buttermilk amount varies based on humidity. Do no let them be goopey.)
Knead very little.
Flour your counter and dump mix onto counter.
Roll out and cut using a glass, biscuit cutter or knife.

Bake on ungreased cookie sheet @ 450 for 12-15 min.
Makes about 16
