Spaghetti Carbonara

  • 1 box of spaghetti
  • 1 small bag of frozen peas (no its not traditional...but this becomes an all in one dish around here)
  • 3-4 Tbl minced garlic
  • 1 lb bacon (cut in pieces)
  • 6 eggs
  • 1 pint heavy whipping cream
  • Parmesan Cheese
  1. Bring noodles to a boil, add peas.
  2. Cook pasta till al dente. (This isn't as good with over cooked pasta!)
  3. Fry bacon pieces to almost done.
  4. Add Garlic and finish bacon.
  5. Pull bacon out of oil, but keep oil in the pan.
  6. Mix eggs with a splash of cream.
  7. Scramble eggs in bacon oil.
  8. Drain pasta, but leave a small amount of pasta water in the pot.
  9. Put pasta, peas, bacon, garlic, eggs, etc back into pot.
  10. Add the remaining cream and heat thru.
  11. Put onto large serving dish.
  12. Top with shaved parmesan cheese.

This is a VERY filling dish. This can feed 8...but sometimes it only feeds 4 very hungry pasta eatters. Lets be honest its addictive. We serve this alone, but if you add a salad it'll stretch even farther. This is MY kind of comfort food.
